SUMMER RECIPE - Barbecue Sauce

EASY BARBECUE SAUCE
Barbecue Sauce
This is a great, easy recipe for Barbecue Sauce. Make it in advance and simply heat it on the hob or in a pan over the barbecue. Delicious served with barbecued chicken, pork, sausages or fish.

Ingredients

1 carton (500g) Passata (sieved tinned tomatoes)
4 tablespoons Soft Brown Sugar
2 teaspoons ready-made mustard
1 teaspoon Worcestershire Sauce
Juice of half a lemon
Finely ground black pepper

Pour the Passata into a saucepan, add the Soft Brown Sugar and heat gently to dissolve the sugar. Add the Mustard, Worcestershire Sauce, Lemon Juice and Ground Black Pepper. Stir gently and heat until sauce begins to bubble.

Can be served hot or cold. For a chunky sauce use chopped tinned tomatoes in place of Passata. If the sauce is too thick, add a little water or stock.

Chicken in Barbecue Sauce For a tasty casseroled version, saute a large finely chopped onion then lightly fry four chicken breasts in butter until golden brown. Place the onions and chicken breasts in a casserole dish.

Make the barbecue sauce as above and pour over the chicken pieces. Place a lid on the casserole and cook in a preheated oven for 1 hour. Gas Mark 4/180C/350F.
