WINTER RECIPE - Dunking Cookies
Curl up on a cold winter’s day with a cosy warm drink and a home-baked cookie. These simple to make cookies are the perfect accompaniement for a hot cup of tea or coffee or a steaming mug of hot chocolate. Nibble or dunk - the choice is yours!
Ingredients:
225g Self-Raising Flour
Pinch of salt
125g Butter
100g Caster sugar
Finely grated rind of 1 lemon or 2 drops Vanilla Essence
1 beaten egg
Sift the flour and salt into a mixing bowl. Cut the butter into cubes, add to the flour and rub in until the mixture resembles fine breadcrumbs. Add the sugar and mix in the flavouring (either the grated lemon rind or Vanilla essence). Gradually add the beaten egg (you may not need it all!) to bind the mixture together to form a stiff dough. If the mixture is too dry add a few drops of milk to form a stiff dough. Turn out the dough onto a lightly floured board and knead the dough gently. Wrap the dough in clingfilm and chill in the fridge for half an hour.
After resting the dough, turn it out onto a lightly-floured board. Roll out the dough fairly thinly and cut out desired shapes and transfer the cookies to a lightly greased baking tray. Bake in the centre of a moderate oven 175 degrees C or 350 degrees F or Gas Mark 4 for around 10-15 minutes or until the cookies turn a pale golden colour. Leave cookies on a wire cooling rack to cool. Store in an airtight tin when cold. Cookies can be dusted with icing sugar or decorated with royal icing if desired.
